Step 1: Estate Grown Heirloom Olives
The South of Lebanon is known for its rich heritage and vibrant culture. The soil is also rich with nutrients, soft rains fall regularly, and the climate is ideal for growing olives. Our family cares for the trees and the land, bringing the olives to their peak during harvest season.
Step 2: The Harvest
Our heirloom olives are carefully hand-picked each year during the harvest. Family, friends, and visitors from around the world take part in the tradition. Picking the olives by hand protects the trees and reduces the trauma to the olives conserving their taste and lowering the acidity level of the oil. Step 3: Pressing
Our olives are hand sorted, removing leaves and debris from the harvest. The same day they're picked, the olives are washed and ground into a paste that is spread by hand on the disks of the olive oil press. Once the disks are filled, they are stacked on a hydraulic press that releases the oil from the olives.
Step 4: Hand Bottling
The 100% first cold pressed extra virgin olive oil is hand bottled, hand labeled, and hand inspected to ensure each bottle meets only the highest quality standards. The result is a premium oil with a full-bodied, elegantly balanced, robust flavor. We are proud to share our family tradition with you.
